First things first, I caught up with Jun, the mastermind behind this unique eatery. His dad’s burger joint and his own Japanese food expertise collided to create this foodie haven. It’s like destiny brought burgers and sushi together, one dish at a time. Who knew that these two worlds could coexist so harmoniously?
Back in the day, they were all about the burgers. No sushi on the horizon. But when the sushi came into play, things got interesting. Jun’s philosophy is simple: if it’s good food, it’s good to go on the menu. However, convincing customers that burgers and sushi could happily cohabitate on a menu wasn’t a piece of cake (or sushi). It took some time, about four to five years, to win people over. But now, it’s a match made in foodie heaven!
Now, let’s get to the star of the show – the sushi. Jun introduced me to the “three-way” sushi concept, and I was intrigued. Each plate featured three different types of fish, but the magic was in the garnish on top. Albacore with radish and ponzu, bluefin tuna with pepper, salt, and lemon, and Kampachi (that’s an amberjack fish) with uni, truffle salt, truffle oil, and lemon juice. Talk about a flavor explosion!
As a self-proclaimed sushi lover, I couldn’t wait to dig in. The Albacore was light, fresh, and packed with flavor. The bluefin tuna had a delightful kick to it, depending on the garnish you chose. And the Kampachi? Oh boy, it was melt-in-your-mouth goodness. The quality of the fish here is top-notch, and it truly shines in every bite.
