Wood-Fired Pizza in the Heart of Reseda at Flame Pizzeria

Here’s a closer look at one of the best pizzerias in the Valley.

For this episode of Eat Live Love San Fernando Valley, we’re in Reseda at Flame Pizzeria to check out some of their fantastic Neapolitan-style pies. Richard Florczak joined me to talk about his restaurant’s history and, of course, pizza.

For more than 20 years, Chef Richard had been a private chef to Hollywood’s A-list, including Tom Cruise, Mel Gibson, Leonardo DiCaprio, Christina Aguilera, Tyson Chandler, Billy Gardell, Kevin Nealon, and Jennifer Garner, who actually wrote the forward to his award-winning cookbook ‘The Private Chef.’

The oven at Flame can hold seven to eight pizzas at one time. It’s a wood-fired oven and everything that’s heated or cooked in the restaurant is made in that oven, including their meatballs and wings. There are no other heat sources in the restaurant.

Richard believes that a good pie is all about the dough. If you don’t have a good crust, you might as well forget it. He imports his flour and dough starter from Italy, and the dough rises for two to four days before cooking in the wood oven.

It’s not just pizza here at Flame. Their wood-fired wings have 25 different sauces. They’re baked in a wood-fired oven, then heated up to order after they’re tossed in an aluminum bag with sauce, then they’re served nice and hot to the customer. It’s a really unique way to serve wings.
