The main inspiration behind Maxwell Chicken Rice comes from when Shaun and his brother used to eat at a restaurant in the San Gabriel Valley called Savoy. It’s is a popular restaurant that offers affordable food and their signature dish is the Singaporean-style Hainan chicken.
Hainan chicken is a very simple dish. It is a poached chicken. The poaching liquid is used to make rice out of it. It is then paired with their three (3) sauces – sambal, soy and ginger scallion. It is garnished with some pickled vegetables. Aside from that, Maxwell Chicken Rice also serves an American-style fried chicken paired with the same rice and yuzu honey ponzu sauce.
For the hainan chicken, they really want the chicken flavor to shine. In fact, they don’t season the chicken at all. You won’t find them adding pepper or salt to the chicken. The stars of the hainan chicken dish is of course the chicken and the sauces. The sauces themselves provide all of the seasoning to the chicken. The first is the ginger scallion sauce which has an earthy taste to it giving you that ginger punch. Their homemade soy sauce offers a salt element, satisfying the savory portion. Finally, and the crowd pleaser, is the sambal sauce that has the spicy kick. All three give you the earthy, salty and spice flavors combined. They recommend taking the chicken, putting it on top of the rice, pouring the sauces on top and mixing it all together. Very simple but oh so good!
